Maris Piper - the driest of our potatoes, excellent for Kugel, baking, frying, roasting and gnocchi (white skin and flesh)
Russett - a lovely dry potato great for kugel, wedges and frying
Sebago - all purpose potato, makes lovely fluffy mash, roasts well and also good for Kugel (white skin and flesh)
Otway Red - a lovely mashing and oven potato, (red skin and white flesh)

Nicolas - a beautiful potato with yellow flesh, excellent for boiling/salad and roasting
